A group of celebrities hired me to whip up some tapas, and they’re getting hungry! I picked these six dishes because they’re simple, delicious, and can all be cooked in one pan. Let’s get cooking and make this party unforgettable!

🥜 Quick Skillet Spiced Nuts Recipe

– 2 cups mixed nuts (almonds, cashews, pecans, walnuts, etc.)
– 1 tablespoon olive oil or butter
– 1 tablespoon honey or maple syrup (optional, for a sweet glaze)
– 1 teaspoon smoked paprika
– 1/2 teaspoon ground cumin
– 1/4 teaspoon cayenne pepper (optional, for heat)
– 1/2 teaspoon ground cinnamon (optional, for warmth)
– 1/2 teaspoon salt
– 1 teaspoon sugar (optional, for a slightly sweet touch)

1. Place a large, nonstick skillet over medium heat.
2. Add the nuts to the dry skillet. Toast them for 4–5 minutes, stirring frequently, until they are lightly golden and fragrant. Be careful not to burn them.
3. Reduce the heat to low and drizzle olive oil or add butter to the skillet, stirring to coat the nuts evenly.
4. Add the smoked paprika, cumin, cayenne, cinnamon, salt, and sugar. Toss the nuts in the skillet to coat them evenly with the spice mixture.
5. If you’re using honey or maple syrup, drizzle it over the nuts and stir quickly to coat. This will create a sticky, caramelized glaze.
6. Cook for 2–3 more minutes, stirring constantly, until the nuts are evenly coated and the spices are aromatic.
7. Remove from the skillet and spread the nuts on a sheet of parchment paper or a plate to cool. As they cool, the glaze will harden slightly.

🌶 Skillet Rainbow Peppers with Tomatoes and Feta

– 3 large bell peppers (1 red, 1 yellow, 1 orange), thinly sliced
– 2 tablespoons extra virgin olive oil
– 1 small red onion, thinly sliced
– 2 garlic cloves, minced
– 2 medium ripe tomatoes, diced (or 1 cup canned diced tomatoes)
– 1 teaspoon dried oregano
– 1/4 teaspoon crushed red pepper flakes (optional, for a slight kick)
– Salt, to taste
– Freshly ground black pepper, to taste
– 1/2 cup crumbled feta cheese
– 2 tablespoons fresh parsley or dill, chopped, for garnish

1. Heat the olive oil in a large skillet over medium heat.
2. Add the sliced bell peppers and onion. Sauté for 5–7 minutes, stirring occasionally, until the vegetables begin to soften.
3. Add the minced garlic to the skillet and cook for 1 minute, until fragrant.
4. Stir in the diced tomatoes, oregano, crushed red pepper flakes (if using), salt, and black pepper.
5. Simmer for 5–7 minutes, stirring occasionally, until the tomatoes break down slightly and create a light sauce.
6. Sprinkle the crumbled feta cheese evenly over the peppers and tomatoes.
7. Cover the skillet with a lid and cook for 2–3 minutes, until the feta softens slightly but doesn’t melt completely.
8. Remove the skillet from heat. Sprinkle the dish with fresh parsley or dill for added color and flavor.
9. Serve warm with crusty bread or pita to soak up the juices.
