fresh cilantro leaves
spring onion
fresh garlic
cannellini beans
parmesan cheese
olive oil
lemon juice
Salt to taste
You can place all the ingredients in the food processor and whiz it up in one go or just the first five, up to the oil and process until finely chopped. Then with the motor running, pour the olive oil in a steady stream into the pesto till all the ingredients are well combined. Add lemon juice and salt to taste. Place in jars and pour a layer of oil on top and seal. Makes about 1 cup. Keep refrigerated.
This pesto will be great with pasta, or in sandwiches, as a marinade for chicken breasts or a sauce on the side of grilled fish and meats. A delicious condiment which chelates heavy metals from the body while adding flavor and interest to your meals. Include it in your diet as a simple pesto sauce by replacing the basil or if you aren’t too crazy about cilantro, combine it with basil when you make pesto.
