How to Express the Oils from an Orange Peel for Garnish | Pottery Barn

To extract the fragrant oils from the orange peel, use a vegetable peeler to slice a long piece of peel. Be careful not to get the white pith while peeling as the pith is quite bitter.

Hold the peel over your glass and give it a good squeeze to extract as much oil as possible. The orange peel is for garnish so be careful it doesn’t break into half while extracting the oils. Next, rub the peel around the rim of the glass for adding a bit of flavor while sipping. Finally, twist the peel gently to form a spiral for beautiful presentation and drop in your drink.
